Healthy Foods For Summer Barbecues

Now that it’s nearing the end of summer and we’re headed into fall, we only have a few more weeks to enjoy longer days, warmer weather, and of course, barbecues and grilled food. Instead of going all out and indulging on your favorite higher calorie dishes, stick to these healthier options that taste just as delicious on the grill.

Many people enjoy corn on the cob, especially if it’s cooked on the grill. Boiling dissolves most of corn’s nutrients in the cooking water, so grilling corn is a much healthier option. Grilling corn in the husks is even more delicious!

Rather than pulling out a box of steaks from your freezer, stick to grilled chicken, tofu, vegetables or fruit. Look for an organic and all-natural barbecue sauce to coat on your chicken or tofu before grilling, or make a homemade sweet and sour or barbecue sauce for the healthiest option.

A delicious and healthy meal could come in the form of kebabs, which also make for a beautiful presentation. Simply add cherry tomatoes, sliced zucchini, sliced onions, and cubed tofu or chicken to skewers and grill until done. Serve with your homemade barbecue or sweet and sour sauce. For a little something extra, add cubed pineapple to the skewers before grilling, which is a healthy and delicious addition.

For a completely healthy feast, serve with baked or roasted potatoes. Create a healthier version of your famous roasted potatoes by tossing sliced and unpeeled potatoes in a large bowl and combining ¼ cup of extra virgin olive oil, one tablespoon of rosemary, and one tablespoon of thyme. Bake in the oven for about an hour. Alternately, cook your baked potatoes right on the grill and save on a few extra dishes!

You can grill just about any vegetable, so consider grilling fresh cut green beans or asparagus. Place your vegetables on a sheet of aluminum foil, drizzle with extra virgin olive oil and salt, and toss until well coated. Next, add about two tablespoons of water and fold the aluminum foil together at the top. Pinch the sides closed and cook your vegetables on the grill in this pouch.
